Lavender & Blueberry Iced Tea
Very few tea combinations come together quite as nicely as lavender, chamomile, and blueberry. One sip of this magical concoction, and you’ll understand why it quickly became a favorite among iced teas.
Ingredients
2 tbsp Lavender Flowers
3 tbsp Chamomile Flowers
6 cups filtered water
2 tbsp Vanilla Flavoring or Vanilla Extract
1 cup Frozen Blueberries that have thawed + 1/2 cup water
1/4 cup Lemon Juice
1/2 cup granulated sugar (or preferred sweetener)
Garnish: Frozen Blueberries and/or Lemon Slices
Directions:
In a 6 cup pot, add your 4 cups of water and bring to a boil. Once boiling, remove from heat, add the lavender and chamomile teas, cover, and brew for 5 minutes.
While the tea is brewing, add the thawed blueberries and 1/4 cup of water to a blender. Pulse ONLY for a few seconds, just to start breaking up the berries and releasing more of the juice. Strain the mixture through a fine mesh strainer. Use a spoon to remove any foam. Set the juice aside.
Once the tea has brewed, strain out the tea bags and chamomile flowers. Add the hot brewed tea to a heat-proof pitcher. Stir in your sweetener until dissolved. Add in the lemon juice, strained blueberry Juice, and vanilla extract.
Allow to cool on the counter, then place in the refrigerator to cool completely. When ready to serve, pour in a glass over ice and garnish with extra frozen blueberries.
Notes:
I’ve tried this a few different ways and frozen blueberries that have thawed will lend better color and a bit more juice. Fresh blueberries will not give you the color you want in this tea.
Also do not press the blended blueberries through the strainer as that will release more of the pectin in the blueberries and your juice may end up being a bit gelatinous.
First time around, I made what I perceived to be the following mistakes:
using fresh blueberries
blending the blueberries too long
pressing through the strainer as I was filtering
This resulted in a jiggly blueberry material that was essentially unusable for the tea as it did not incorporate easily at all and the final tea had wayyyy too much weird material that was really hard to filter out.
